You'll probably want to make the eyes with sour cream and caviar or something, in that case. Seriously though, profiteroles (cream puffs) are nice and all, but gougères are one of the best things in the world. There's a good, illustrated step-by-step <a href="http://fxcuisine.com/default.asp?Display=66">here</a>. I've always used the method in <a href="http://en.wikipedia.org/wiki/Larousse_Gastronomique">Larousse Gastronomique</a>, if you have access to a copy. All of the choux pastry variations are actually pretty easy.
