No kidding! I just barely did this, but used the hilbert curve to get the brain shape!
Here's how I did it (and if I can do it with $10 of supplies in a hotel room 3000 miles from home, so can you):

As far as I can make out, the method for knitting one is:
Knit a plain hat, make a heap of I-cord, sew it on in squiggly lines
And for crochet (which I find faster and easier):
Crochet a plain hat in double stitch, create squiggly "folds" on the outside of it using treble stitch (either by making a long line of chain stitch then a row of treble and sewing it on or straight onto the hat).
Just remember that for it to look like a brain the left and right halves should be separate, at least at the front.
If someone wanted, they could pay money for an actual pattern here: http://crochettoday.com/crochet-patterns/brainy-maniac or they could pay $40 for this one on etsy: http://www.etsy.com/listing/84500335/adult-size-ready-to-ship-exposed?ref=sr_gallery_25&ga_search_submit=&ga_search_query=brain+hat&ga_view_type=gallery&ga_ship_to=US&ga_search_type=handmade&ga_facet=handmade
