		<description>My understanding is that when Christianity was making inroads into Northern Europe, the standard sacrifice to the old gods was horse. You gave the gods the offal and had a good meal or three on the meat.

The &#039;ban&#039; on eating horse meat was created to discourage worship of the old gods.  In the south, at least on Sardinia, this wasn&#039;t a problem, and if the same ban was instituted, it didn&#039;t stick. Between Cagliari and Flumini I remember seeing three &#039;Horse Butcher&#039; (in Italian, which I won&#039;t mangle here) shops.

The horse I had there was at a wonderful restaurant, &quot;Il Moru&quot;, over on the southeast coast that served local food and dishes.
