    My understanding is that curry as we know it was fundamentally changed by the discovery of the Americas and the consequent introduction of chili peppers to Indian cuisine.

    I would love to know what Indian food tasted like 650 years ago.  I have a pretty good idea what Euros ate, but no idea really what flavours were happening in other parts of the world that weren’t having Dark Ages and the like.

       Dunno about fundamentally; ginger and garlic both have heat and pepper is native to India.
