AudioHijack is an excellent MacOS app that lets your record audio from any source, including Flash, Real streams, and Windows Media Player/iTunes DRM files.
They've just added a suite of podcasting features that look really good: a cross-app mixer, a silence-adder, which can be combined to make call-in segments work really well.
