TeranGroup presents a "novel thermomechanical model" for simulating rising dough and the properties of bread, cookies, pancakes, etc.
Heat transfer with thermal expansion is used to model thermal variations in material properties. Water- based mass transfer is resolved through the porous mixture, gas represents carbon dioxide produced by leavening agents in the baking process and dough is modeled as a viscoelastoplastic solid to represent its varied and complex rheological properties. Water content in the mixture reduces during the baking process according to Fick’s Law which contributes to drying and cracking of crust at the material boundary. Carbon dioxide gas produced by leavening agents during baking creates internal pressure that causes rising. The viscoelastoplastic model for the dough is temperature dependent and is used to model melting and solidification. We discretize the governing equations using a novel Material Point Method designed to track the solid phase of the mixture.

The Muffaletta, as created and prepared by Central Grocery on Decatur in New Orleans, is my second favorite sandwich on earth. I recently spent a week in New Orleans trying Muffaletta at various locations to see if I might possibly like one better than the OG sandwich sold across from the French Market. I could […]
For tips on making your own sourdough starter, start here! My new pandemic starter has had a couple of weeks to settle down and it is performing pretty much how I would expect. Feeding your starter every day really helps it out. I’ve been feeding this blob since 3/16. I have reduced the amount I […]
When I started seeing all of the posts on social media (and here on Boing Boing) about “pandemic baking,” it made instant and perfect sense to me. But then, I started seeing people asking “why?” on Facebook and Twitter. My first thought was “this is clearly a question from non-bakers.” If you’ve baked bread with […]
It’s almost shocking to say…but there’s actually an incredible amount of manhood wrapped up in how well you cook a steak. Of course, no one would argue your grilling abilities are THAT important. Or that how well you sear a prime slab of beef should have any bearing on your social standing or feeling of […]
The notion of two people sleeping in the same bed always inspires romantic visions of love and intimacy. However, most quickly realize that the romance of sleeping together is often quickly replaced by the realities of the act. One partner snores. The other talks in their sleep. One grinds their teeth. The other hogs the […]
Add Internet of Things to the shortlist of those actually benefiting from the effects of the COVID-19 pandemic. You might not realize it, but the organizing principle that is bringing more automation to the world is actually proving to be a major asset as human beings are forced to stay home and away from the […]
