I've watched 3Blue1Brown's excellent explainer video about neural networks a couple of times, but my understanding of what they are and how they work was greatly improved by Allison George's Neural Networks from Scratch. It's an interactive website that takes you through the process of building a neural net to separate strawberries from blueberries.
